Ruby is the colour of the wine and CUB means that it tastes like a white wine. (Comme Un Blanc in French). We have a terroir that naturally produces fruity wines like Thiols for the whites. So why not reveal this type of aromas on the Merlots, since they also contain some. This is how it works : pick the Merlots when they are ‘at the “peak of the fresh fruit’. Then adopt the same principles of winemaking as for our dry white wines : a long cold skin maceration of 3 weeks to get the thiols, these aromas, which are reminiscent of grapefruit and passion fruit. No malolactic fermentation to keep its freshness and bottled in spring after the natural winter clarification.

Assemblage : 25% Sauvignon blanc, 75% Merlot Noir.
Vinification et élevage : Cold maceration (4°) during 15 days. Pressing, then low temperatures fermentation at 18°C.
