We only used Cabernet Franc for its drinkability and frankness. It is not really a coincidence that this grape variety stopped here on its journey from the Spanish Basque country to the Loire! We made short macerations. We were looking for fruit and colour only. Please note that we didn’t want any pearliness or woodiness at the end of the vinification. We wanted juice,fermented, but nothing but juice. The Franc et Sans Soufre brightens up thetables of wine lovers in search of subtle and light red wines. Vinified and agedwithout sulphur with great care and attention, it expresses aromas of raspberry and violet.

Rubis Cub

The story of a red wine that tastes like a white wine : Rubis, is the color of the wine and CUB is that it can be drunk « Comme Un Blanc », like a white. We have a terroir that naturally gives fruity wines like Thiols for whites. So why not highlight this type of aroma in the merlots since they also contain them.
The principle: Pick the Merlots when they are at the "peak of fresh fruit". Then adopt the same vinification principles as for our dry white wines: a long cold skin maceration of 3 weeks to get the thiols, these aromas whose descriptors remind us of grapefruit and passion fruit. No malolactic fermentation to keep its freshness and bottling in spring after the natural winter clarification. Surprising and confusing result guaranteed!

Blend : 25 % Sauvignon blanc, 75 % Merlot Noir.
Vinification and maturation : Cold maceration (4°) for 15 days. Pressing then fermentation at low temperature (18°C).

Entre-deux-Mers - Sauvignon gris : While the General was making his comeback in May 1958, while others were drafting the constitution of the Fifth Republic, some were counting the last vines of Sauvignon Gris: 10 hectares, or only 14 small soccer fields, remained in France. Its supporters then identified and defended it. Still rare in absolute terms, it makes up a third of our vineyard. Its region of origin flatters it: mature and dashing, it is irresistibly greedy.

Vinification and maturation : Skin contact maceration for 24 hours. Fermentation at 18°C. Aged on lees.

This bottle is a feat as we like them in Fontenille. Inspired by the spirit of Pet. Nat. but also by the precision of a champagne, we imagined to shape this bubble with all these contradictions. The challenge was to keep the fruit intact without any addition throughout the traditional process. In the end, generous, fleshy, crisp and yet frank, fine and lively, it keeps its promise. An advice: pop the cork at the beginning of the festivities, it prepares the mouth for the agapes.

Production : 2 000 bottles.
Blend : 100 % Sauvignon Blanc.
Vinification and maturation : Direct pressing. Fermentation at low temperatures (16°C). Bottled before the end of fermentation. Aged on laths for 6 months. Disgorged without any input.
The Pet Nat is a natural and artisanal sparkling wine made according to a method also called Ancestral method. Unlike Champagne or Crémant, where sugar and yeast are used in the wine to make a second fermentation and thus bubbles, Pet Nat consists in bottling wine whose fermentation is not finished. The little extra that Stéphane adds, is the disgorging phase which allows the wine to be clear and clean.

Blend : Cabernet Sauvignon 50%, Cabernet Franc 50% .
Vinification and maturation : Les Bulles de Fontenille is a Crémant made according to the traditional method. It complies with the very precise specifications of the AOP Crémant. Harvested by hand in crates, vinified at low temperature to keep all the fruit aromas, we then add to this basic wine a liqueur de tirage, composed of sugar and yeast, to prompt a second alcoholic fermentation in the bottle. The bottles are then kept for 14 months "on laths" at a temperature of 15°C. This "prise de mousse" is important because the quality of the effervescence depends on it (fineness of the strings of bubbles, elegance of the cordon de mousse). After more than a year of maturing, the riddlers come into action. They reproduce the ancestral gesture of the “cavistes-remueurs”. Thus, by making the bottle do a series of rotations and successive tilts, the deposit is gathered in the neck of the bottle. The disgorging allows to eliminate the deposit contained in the bottle. We then add the expedition liquor. We have chosen to be in the "brut" category
Tasting : Very light pink colour. Fine and fruity nose with peach and redcurrant aromas. Floral notes of hawthorn. Lively attack. The bubbles are very fine. Nice balance between freshness and finesse.

Vinification and maturation : Direct pressing. Fermentation at low temperature, 16°C. Wines matured on fine lees.
Tasting : Light and clear colour, this fresh and greedy rosé shows a very fine nose, with fruity aromas of raspberry and grapefruit combined with subtle floral scents. Mineral and balanced on the palate, it finishes with pretty citrus aromas. This seductive and trendy rosé will quickly become a must for your aperitifs. It goes brilliantly with salads, couscous, stuffed tomatoes, sushis... ideal for a moment of relaxation, it will offer you an invigorating moment for the body, the senses and the mind.

Vinification and maturation : Skin contact maceration for 48 hours. Fermentation at low temperature, 16°C. Wines matured on fine lees.
Tasting : A real curiosity this Bordeaux Clairet, vinified as a light red wine. Fruit, freshness, tenderness, but also balance and character. The Cabernet Franc, from which it is made, brings a lot of elegance. Ideal in summer, as an aperitif, with cold buffets and grilled meats, this gastronomic rosé is a superb accompaniment to salads, buckwheat pancakes, chicken curry, Italian and exotic cuisine... to be drunk within 2 years.

Les Survivantes
Bordeaux blanc sec

Terroir : Clayey gravel. Southern exposure.
Average age : Semillon planted in 1947 and 1952.
Production : 3000 bottles
Blend : Sémillon 50 %, Sauvignon blanc 25 %, Sauvignon gris 25 %.
Vinification and ageing : Vinified and aged in new barrels for 6 months. Aged on fine lees with regular stirring.
Tasting : Clear golden yellow colour, delicate and fresh woody nose. Very elegant expression with sweet and mineral notes. A form of mellowness and tension distinguish a superb balance. Its acidity predicts a very beautiful future. Persistent finish on spices. To be shared with friends as an aperitif. This wine will accompany very well fish in sauce, poultry, cheeses, sushis, scallops. To discover on a carpaccio of salmon. When it’s young decant before serving, it allows the wine to develop and get more mature.

Entre-deux-Mers

Terroir : Clayey-siliceous and presence of gravel.

Production : 100 000 bottles.
Blend : Sauvignon Blanc 50 %, Sauvignon Gris 20 %, Sémillon 10 %, Muscadelle 20 %.
Vinification and maturation :Skin contact maceration from 10 to 24 hours. Fermentation at low temperature, 16°C. Wines aged on fine lees.
Tasting :Golden yellow colour, clear. Nose of an interesting immediate frankness with aromas of citrus fruit and white peaches. Lively and ample attack at the same time. The mouth is pleasant with a perfect balance. Nice fat, a slightly peppery finish with a nice finale. Made from a blend dominated by Sauvignon, this wine has a lively and intense lightness. It goes superbly with seafood and salmon, sushis, paella and sauerkraut.
To try with goat cheese.

Cadillac Côtes de Bordeaux

Terroir : Stony gravel. Sloping soils facing south/southwest.

Production : 26 660 bottles
Blend : Cabernet Sauvignon 50 %, Merlot Noir 50 %.
Vinification and maturation : Long vatting time. Temperature control at 28°C. Aged 18 months in barrels 50% new and 50% one wine.
Tasting : Deep ruby color, seductive nose with black cherry and spice aromas. Structured and full-bodied, this barrel-aged wine balances classic elegance and consuming sensuality. It is made from a blend of equal parts of black Merlot and Cabernet Sauvignon. It is in line with the great wines of Bordeaux. A wine to share and make your friends discover. Amazing with a duck breast, a duck confit, a rib of beef, a roast leg of lamb and some cheeses.

Rouge Passion

A very pleasant ruby colour. Elegant and round in the
palate with a fine lingering... Well structured and full bodied, this wine represents well the great character and the authentic personality of the great red Bordeaux. Blended with mostly Merlot noir, it’s elegant and harmonious and a great value to share with friends. It goes well with grilled meat, veal stew and any other stews, poultry and some cheeses .

Blend: : Merlot 80%, Cabernet Sauvignon 10 %, Cabernet franc 10%.
Vinification and maturation : Fruit and structure are aimed for in the winemaking. 72 hours skin maceration undercold temperature, controlled at 25°C. After 18 months of ageing, blending of 50% from oak barrels –of which 1/3 renewed – and 50% from vat.
